A San Juan Capistrano sushi bar that eats like a tapas table.
The Idea
Totoya means fish house. The name sits between two red fish on the sign out front, and it tells you most of what you need to know: this is a sushi bar, and it takes the fish seriously.
What makes it Totoya is the second word. Tapas. The kitchen plates small. Fried jalapeno with spicy ahi, crispy rice, calamari, grilled yellowtail cheek. Plates made to land in the middle of the table and get passed around.
So the rolls come out the same way. The Totoya roll with no rice. The seared Aburi Hamachi. The Marbella that regulars have ordered for years. Laid down the plate so everyone can reach.
At the Bar
The best seat is at the sushi bar.
Regulars say the same thing: the chef and staff service at the bar is the reason they keep coming back. Fresh fish, prepared in front of you, no frills.
