The tandoor goes on at 4pm. By the time the dinner ticket prints, the clay walls are at temperature and the marinated chicken sears the moment it touches them. Char on the outside. Yogurt-tender on the inside. Smoke rising, heat thrumming, every piece pulled out the second it's done.
