The Seven Folds
Hand-pinched. Seven pleats.
Seven small pinches walked evenly around the rim, finished in a topknot at the top. The number gave us our name.

Round the wrapper
A thin disc, rolled by hand, just thick enough to hold heat and broth without tearing.

Center the filling
A small spoonful of pork, ginger, scallion, and chilled aspic that will melt into soup.

First pinch
Lift the edge with the thumb and forefinger. A single small pleat begins the rim.

Walk the pleats
Thumb back, forefinger forward, again and again. Each pinch evenly spaced.

Count to seven
Seven small folds, walked all the way around the rim of the dumpling.

Pinch the topknot
The seventh pleat seals into a small crown at the top. Nothing leaks.

Steam, then eat
Five minutes over hot water. The aspic melts. The broth returns to the inside.

Pillowy steamed buns split open over slow-roasted char siu in a sweet-savory glaze.
House Signature Squid Ink Soup Dumplings
The XLB done in jet-black wrappers, crab and pork inside. A modern house signature.
Crispy Pork Cutlet Rice
Hand-pounded pork cutlet, panko-fried, sliced thick, over wok-tossed egg-fried rice.
House Chow Mein
Springy egg noodles tossed hard in the wok with chicken, napa cabbage, and chives.
Fried Sesame Balls
Crackly sesame-crusted glutinous shell, warm sweet red bean inside. To close.
