Sattva · सत्त्व
A word for clarity, lightness, and harmony. A plate where the heat is held by something cool, and the rich is lifted by something bright.
Rasoi simply means the kitchen. So: a kitchen in balance.

Sattva means balance
In the old philosophy, sattva is the quality of clarity, lightness, and harmony. We took it as the name because that is how we think a plate of food should feel: nothing drowned out, everything in its place.

A calm, clean room
A warm terracotta wall, low amber light, fresh flowers on the tables, Indian music in the background. Guests keep using the same words for it: clean, stylish, serene, inviting. The room is built to linger in.
